    So, I’ve owned a Pecos and a Brazos. One thing I noticed was the Lava Lock tuning plate worked insanely well on the Pecos and absolutely flopped on the Brazos. Odd, right? I’m now on my second Pecos due to needing one (sold my Brazos to buy a MB 1050. I know, it was a bad idea.) makes me wish I had added 16” of stack to my Brazos. My current Pecos has an Amazon felt gasket, LavaLock tuning plate, I’m super curious to see how performance will change once I extend the length of the stack. Current temps are quite even cooking but I still want more draw.

    I'm actually making a double-stack version right now. I found (made a bunch for a disabled vet friend like a decade ago) that double-stacking and using two triangles with 2x6's at the back makes for a much more stable platform. I also added two cross braces on essentially the same bottom stringer box, 1/3rd of the way across to take out the flex of the bottom box. Built him six of them in a day and he has them till the now. We picked up some 4ft x 12ft tarps at HF and they got bungied down over the side cross braces in the identical location to those you added. If you find a permanent home for it, try a double-stacked version. You wont be disappointed. Not too much harder to load, air flow is still good enough, and those that I built have survived hits from a tractor. (student driver, his granddaughter.)

    I have a cheap offset smoker myself, and it's hard to get a good temperature unless I use an enormous amount of coal/wood. At LEAST 3 times - probably even much more, than I'd need for my barbecue grill. And it's no wonder, since the surface area of the whole offset smoker is easily 3x the surface area of the bbq grill. My idea is to insulate the offset smoker - the whole thing - to retain the heat. You can actually buy insulating blankets for offset smokers, but they're pretty expensive for what they are. I'm thinkin about using mineral wool (heat resistant to over 1000°C) to insulate the outside of the offset smoker. I'm just not quite sure how to attach it.. and how to make it not completely ugly. 😅😅

    Complimenti gran bel video confronto,qui in Italia gli smoker non sono molto utilizzati ma io sto cercando un bbq per principianti senza starci dietro troppo e ancora ho qualche dubbio tra quale dei due,il Weber è più facile da trovare qui in Italia il pbc è poco conosciuto ma mi piace molto soprattutto la versione junior più indicata per le mie grigliate.     Forgive me for not understanding, but isn't cutting out the baffle to make up for adding a stack extension, the same as if you were to just leave the stack and baffle alone? Seems like the stack extension created a need for more airflow so I understand why you cut out the baffle, but if you didn't add the stack extension, would the smoker already be tuned for that out of the factory? Either way, I appreciate the time you took to make this video, I'm still learning ✌️

    I cut my baffle like yours & mounted it up against the bottom right rack support, perpendicular to the grate. It cooks perfectly even from one end to the other. So big win... especially when coupled with a stack extension fitted with a butterfly damper. Cooks like much bigger & pricier smokers

    Would fitting a stack extension that has a wider diameter than the stack it's fitting into make any difference, or is it just about the length of the exhaust stack?

    One thing you have to remember is a lid gasket (to seal the smoke). If you install this with a gasket already installed, plan on replacing the gasket if the old one gets funky. Or it will be out of alignment. If you don’t have a gasket and plan on installing one, do that before mounting the hinge.

    LavaLock gang here. I use my old door as a beer cap backboard. This is a great add-on which makes adding fuel a breeze.

    Another factor to consider is that the air draw depends on the temperature. You cant have it balanced for both 200 and 400. I use extended stack, drilled-through baffle and a water pan (even empty) and I move the pan depending on my temperature. I end up with short hotspot close to chamber entry (where I dont cook) at high temps and nicely even distribution at lower temps.

    With the Pecos modifications, how often are you needing to add a split? Roughly what size split are you using? Thanks!!

      Can’t say I have it down to a time, but if I had to guess, probably about every 15-20 minutes. Hard to say because it depends on the size, but that estimate is based off using B&B post oak splits, cut once down the middle.

    My first smoke was ribs too. They were in there for eight hours and after that they were still were not done lol by finishing them in the oven. My neck smoke was ribs again, but I started them in the oven and then finished them in the smoker lol that’s the story of my first smoke. The end.

    Had been using pit barrel for some years, their air-flow system needs huge improvement, until now it's a screw that they use to tighten the opening lid; after some years of using it once in a while, thread in screw turned into mush and now lid is loose, I cannot tighten it, and cannot regulate lid, either fully open, or fully closed, need to drill hole to remove screw and try to fix it with home-depot bolts and screws somehow- but issue is that opening will not be as precise as before, would go with Weber.

    Have you tried a straight vertical baffle that way when the air flows and it goes straight up into the barbecue pit in over the food that should eliminate the hotspot at the very entrance of the grille
